The Domaine de la Fosse
is in the
"Petite Camargue"
between Saint-Gilles
and Aigues Mortes,
along the Petit Rhône.

A former cereal, vine and fruit farm, for some years the Domaine de la Fosse has concentrated on the production of rice.
"The rice stretches its toes into the water
and its head towards the sun."

The farm-house is an ancient command post, built by the Knights
of the Maltese Cross, who founded a hospital in Saint-Gilles in 1112AD
.

The Provençal people
are descendants of the Order of the Knights
of the Maltese Cross,
which defended the Provence.
In the Middle Ages, Saint-Gilles
became the centre of an
important pilgrimage
on the road to
Saint-Jacques de Compostelle.

 


The Domaine de la Fosse
has been carefully restored.
The restorations have
retained all the charm
and subtlety
of the Petite Camargue
.


The arrangement of the buildings is common
amongst those built by the Commanders
of the Maltese Cross.

Together they form a large "quarré" (square)
which became the centre of life of these farms.
It offered shelter, work, a place to meet
and have fun.
